Jambalaya
Ingredients
- 4 chicken breasts lightly browned
- 2 Tbsp butter
- 34 c chopped onion
- 12 c chopped celery
- 14 c chopped bell pepper
- 1 Tbsp minced parsley
- 1 minced garlic clove
- 12 tsp dried thyme
- 28 oz can chopped undrained tomatoes
- 1 can beef broth
- 1 14 c water
- 1 tsp sugar
- 1 tsp chili powder
- black pepper to taste
- 2 c chopped ham
- 1 c uncooked rice
Directions
- Chop up chicken breasts Combine chicken with all ingredients except ham and rice Bring to boil Add ham and rice Cover and simmer until rice is done
