Jan Sherrill'S Shrimp Salad

Ingredients
- 3 lb. large shrimp, peeled and deveined
- 3 cucumbers, peeled and sliced
- 1 can pitted black olives
- 1 bunch parsley, chopped
- 3 scallions, sliced
- 1/3 c. lemon juice
- 1 c. extra-virgin olive oil
- 2 Tbsp. cumin
- salt and pepper to taste
Directions
- Salt cucumbers; place in bowl for 2 hours.
- Wring out moisture.
- Mix other ingredients together in large bowl.
- When cucumbers are ready, add to mixture.
- Let it sit for an hour; adjust seasoning.
- Serve on bed of lettuce.
- Serves 6 to 8.
