Jean NickelS Peanut Brittle

Ingredients

  • 2 c sugar
  • 1 c white corn syrup
  • 2 c raw peanuts raw only
  • 3 Tbsp butter
  • 1 tsp vanilla
  • 2 tsp soda

Directions

  1. Put 12 cup water in large heavy pan and bring to boil
  2. Add sugar and syrup stir until dissolved and then boil until it spins a thread Add peanuts and cook slowly over a low fire until it turns a golden brown
  3. Turn off fire and leave pan on burner Then add butter and flavoring and stir good
  4. Add baking soda Mixture will foam up and change color and texture
  5. Stir thoroughly and then spread quickly in large buttered jelly roll pan
