Jellied Beet Salad

Ingredients

  • 1 lb can diced beets
  • 1 3 oz pkg orange and lemon jello
  • 34 tsp salt
  • 1 c boiling water
  • 2 Tbsp vinegar
  • 12 c celery chopped or sliced thin
  • 1 Tbsp horseradish
  • 1 dash hot sauce
  • 12 c crushed pineapple
  • 1 Tbsp minced onion

Directions

  1. Drain beets
  2. Measure liquid and add enough cold water to make 34 cup
  3. Dissolve gelatin and salt in boiling water
  4. Add beet liquid vinegar horseradish pepper sauce and minced onion
  5. Chill until thick
  6. Fold in beets celery and pineapple
  7. You can mold as a sheet or in 8 individual molds
  8. Serves 8
