Jello Cheese Cake

Ingredients

  • 8 oz cream cheese
  • 1 c sugar
  • 1 large can evaporated milk
  • 1 3 oz pkg lemon Jell-O
  • 1 c hot water
  • 2 tsp vanilla
  • 32 graham crackers
  • 1 sq butter melted

Directions

  1. Remove cream cheese from fridge
  2. Put evaporated milk in freezer
  3. Add 1 cup hot water to Jell-O
  4. Place in fridge until syrupy
  5. Whip
  6. Add sugar and vanilla to cheese and beat
  7. Whip evaporated milk until it peaks
  8. Mix with cheese mixture
  9. Add crushed pineapple if desired
  10. Press 12 of cracker mixture into a 9 x 13-inch Pyrex dish and let stand while preparing other ingredients
  11. Sprinkle balance of crackers over top
