Jelly Roll

Ingredients

  • 1 c flour
  • 1 tsp baking powder
  • 14 tsp salt
  • 3 large eggs 23 c
  • 1 c sugar
  • 13 c water
  • 1 tsp vanilla

Directions

  1. Preheat oven to 375
  2. Grease jelly roll pan and line with aluminum foil
  3. Blend flour baking powder and salt
  4. Set aside Beat eggs in small bowl until thick and lemon colored
  5. Pour eggs into large bowl
  6. Gradually beat in sugar
  7. Blend in water and vanilla on low speed
  8. Slowly mix in dry ingredients until batter is smooth
  9. Pour into pan
  10. Bake 12 to 15 minutes
  11. Loosen edges and turn upside-down on towel sprinkled with confectioners sugar Remove paper
  12. Trim off stiff edges
  13. While hot roll cake and towel from narrow end
  14. Cool unroll spread with jelly and roll again
