JennyS Eggs FlorentineAmerican Meatless Breakfast

Ingredients
- 4 poached eggs
- 4 slices toasted English muffin
- 4 slices Cheddar cheese
- 34 c mayonnaise
- 34 c sour cream
- 1 Tbsp mustard
- 1 Tbsp lemon juice
- 18 tsp cayenne
- 12 c cooked squeezed dry spinach
Directions
- Blend last 6 ingredients in a blender or processor
- Gently heat resultant sauce in saucepan
- Place cheese slices on toast Broil them until cheese melts
