Jerk Chicken

Ingredients

  • 34 c teriyaki sauce
  • 2 large garlic cloves crushed
  • 12 tsp cayenne pepper
  • 12 tsp salt
  • 1 3 12 lb chicken cut into parts
  • 1 Tbsp minced fresh ginger plus 1 12 tsp ground ginger or 2 tsp ground ginger

Directions

  1. Preheat oven to 400
  2. In a large bowl combine teriyaki sauce garlic ginger pepper and salt
  3. Add chicken toss to mix well
  4. Lift chicken out of sauce and place in oiled baking dish skin side down
  5. Bake for 45 minutes turning once and basting frequently with remaining sauce until brown and crispy
  6. Can also be cooked on the grill
