Jiffy Salmon Patties

Ingredients

  • 1 16 oz can salmon
  • 12 c chopped green onions
  • 14 c chopped parsley
  • 1 c fine dry bread crumbs
  • 2 beaten eggs
  • 1 tsp prepared mustard
  • 2 Tbsp lemon juice
  • 2 Tbsp cooking oil

Directions

  1. Drain and flake salmon reserving 13 cup liquid Combine salmon with green onions parsley and bread crumbs Add beaten eggs mustard lemon juice and reserved salmon liquid Fry salmon patties in oil over medium heat until lightly browned on both sides Makes 6 servings
