JonnaS Baked Quail

Ingredients
- 8 quail split down the back
- 12 c oil
- salt and pepper
- 5 green onions chopped
- 1 Tbsp dried parsley
- 1 Tbsp dried celery
- 1 c chicken broth
- 4 oz can mushrooms
Directions
- Salt and pepper birds
- Brown quail in oil
- Place in Dutch oven
- Saute onion parsley and celery
- Add broth and mushrooms and stir well
- Pour over quail
- Cover and bake at 350 for 1 hour or until tender
