Julia ChildS Sweet Onion Quiche
Ingredients
- 3 c thinly sliced sweet onions
- 1 Tbsp olive oil
- 2 Tbsp butter
- 2 Tbsp mince shallots or scallions
- salt
- freshly ground pepper
- nutmeg
- 3 large eggs blended with enough milk or cream to make 1 12 c liquid
- 14 c lightly pressed down grated cheese
- 1 9-inch prebaked pie shell
Directions
- Preheat oven to 375
- Heat olive oil in a large saute pan Saute sliced onions until soft but not browned
- In a separate pan heat butter and saute shallots briefly
- Add to onions and continue cooking until the mixture is tender
- Season with salt pepper and nutmeg let cool
