Ingredients

  • 2 lb dried kidney beans
  • 14 lb lean salt pork
  • 12 c sugar
  • 2 tsp salt
  • 1 tsp soda
  • 14 tsp pepper
  • 14 c molasses

Directions

  1. Soak beans overnight
  2. Place salt pork in the bottom of a bean pot drain the beans and to pot with all other ingredients
  3. Cover with hot water and bake at 325 for 5 or 6 hours
  4. Add more water as needed and reduce temperature to 300 for last hour
  5. Add more molasses if desired
  6. Fork test done when beans are tender but not mushy
  7. Serves 10 hungry people
