Ingredients
- 2 lb dried kidney beans
- 14 lb lean salt pork
- 12 c sugar
- 2 tsp salt
- 1 tsp soda
- 14 tsp pepper
- 14 c molasses
Directions
- Soak beans overnight
- Place salt pork in the bottom of a bean pot drain the beans and to pot with all other ingredients
- Cover with hot water and bake at 325 for 5 or 6 hours
- Add more water as needed and reduce temperature to 300 for last hour
- Add more molasses if desired
- Fork test done when beans are tender but not mushy
- Serves 10 hungry people
