Kansas Style Enchiladas

Ingredients
- 1 lb hamburger meat
- 1 link chorizo Mexican sausage
- 1 c chopped onions
- 2 c diced boiled potatoes
- 1 can sweet peas drained
- 2 c grated Cheddar cheese
- 2 10 oz cans enchilada sauce
- 2 doz corn tortillas
Directions
- Cook hamburger meat and chorizo together drain grease off Combine with vegetables and 1 cup of cheese
- Dip tortillas in hot oil until soft then dip in heated enchilada sauce
- Fill dipped tortilla with mixture then roll and place in baking dish
- Spread with remaining sauce and cheese
- Put in oven until cheese melts and enchiladas are hot
