Kathy Powers HudsonS Zucchini Loaf

Ingredients

  • 3 eggs
  • 1 c oil
  • 1 tsp baking powder
  • 2 c sugar
  • 3 c flour
  • 1 c crushed pineapple drained
  • 2 tsp vanilla
  • 1 tsp salt
  • 1 tsp soda
  • 2 c grated zucchini
  • 1 c chopped nuts
  • 12 c maraschino cherries chopped
  • 10 c all-purpose flour
  • 13 c baking powder
  • 14 c sugar
  • 2 c shortening

Directions

  1. In a bowl stir together flour baking powder sugar and 2 teaspoons salt
  2. Cut in shortening until mixture resembles coarse crumbs
  3. Store in an airtight container for up to 6 weeks at room temperature or for up to 6 months in the freezer
  4. Use to make Easy Biscuits Easy Muffins or Easy Pancakes
