KathyS Zucchini Relish

Ingredients
- 3 c sugar
- 5 Tbsp salt
- 2 Tbsp cornstarch
- 3 tsp turmeric
- 2 tsp celery seed
- 12 tsp pepper
- 10 c chopped zucchini
- 4 c chopped onion
- 1 chopped sweet red pepper
- 1 chopped green pepper
- 2 tsp dry mustard
- 2 12 c cider vinegar
Directions
- Combine zucchini onion and salt let set overnight
- Drain and rinse well
- Place in large pot along with remaining ingredients
- Cook until mixture thickens stirring constantly Do not overcook
- Pack hot into hot sterilized jars leaving 1 inch space
- Adjust caps
- Process 10 minutes in a boiling water bath
- Makes 8 pints
