Kentucky Cream Cake

Ingredients

  • 12 c vegetable shortening
  • 1 stick margarine
  • 2 14 c all-purpose flour
  • 1 c buttermilk
  • 1 c coconut
  • 5 egg whites beaten
  • 2 c sugar
  • 5 egg yolks
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 23 c chopped nuts

Directions

  1. Cream shortening and margarine with sugar
  2. Add egg yolks one at a time
  3. Beat well Add flour and baking soda alternately with buttermilk
  4. Add vanilla coconut and nuts fold in beaten egg whites
  5. Bake in two or three 8 x 8 x 2-inch layers at 350 for 35 to 40 minutes
