Kentucky Cream Cake
Ingredients
- 12 c vegetable shortening
- 1 stick margarine
- 2 14 c all-purpose flour
- 1 c buttermilk
- 1 c coconut
- 5 egg whites beaten
- 2 c sugar
- 5 egg yolks
- 1 tsp baking soda
- 1 tsp vanilla
- 23 c chopped nuts
Directions
- Cream shortening and margarine with sugar
- Add egg yolks one at a time
- Beat well Add flour and baking soda alternately with buttermilk
- Add vanilla coconut and nuts fold in beaten egg whites
- Bake in two or three 8 x 8 x 2-inch layers at 350 for 35 to 40 minutes
