Kentucky Pound Cake
Ingredients
- 2 12 c self-rising flour
- 2 c sugar
- 1 12 c vegetable oil
- 4 eggs divided
- 1 12 tsp cinnamon
- 2 Tbsp hot water
- 8 oz crushed pineapple drained and reserving juice
- 1 c chopped pecans
Directions
- Mix together flour sugar and oil well
- To this mixture add egg yolks cinnamon water pineapple and nuts
- Blend well
- Add egg whites and blend
- Grease and flour tube pan and bake at 325 for 1
- hour and 10 minutes
- After removing cake from pan mix pineapple juice and 2 tablespoons brown sugar
- Spoon over hot cake
