Key Lime Pie

Ingredients

  • grated rind of lime or lemon
  • 1 Tbsp butter
  • 13 c lime juice
  • 3 eggs separated
  • 2 c water
  • 3 12 Tbsp cornstarch
  • 13 c flour
  • 13 tsp salt
  • 1 c sugar
  • baked 9-inch pie shell
  • meringue pie topping

Directions

  1. Combine the flour sugar cornstarch and salt in a saucepan and gradually stir in water
  2. Cook stirring continuously
  3. until thickened
  4. Gradually stir in the beaten egg yolks
  5. Then put back on low heat and cook stirring every two minutes
  6. Stir in lime juice butter and rind
  7. Cool slightly
  8. Pour into baked pastry shell and cool
  9. Add meringue topping
  10. Brown in oven
