Kidney Bean Soup

Ingredients

  • 8 slices bacon
  • bacon drippings
  • 1 clove garlic
  • 1 large onion
  • 2 27 oz cans kidney beans
  • salt if desired
  • 1 8 oz can tomato sauce

Directions

  1. Cook bacon until crisp and crumble
  2. Reserve 2 tablespoons bacon drippings
  3. In a 2-quart casserole dish put bacon drippings diced onion and crushed garlic
  4. Cook in a microwave oven covered for about 3 minutes
  5. Add 12 cup water and rest of ingredients including liquid from beans
  6. Mix until well blended
  7. Cook covered for 10 to 12 minutes
  8. Place 12 soup in a blender for 10 seconds and return to casserole dish
  9. Repeat with other half of soup
  10. If soup is too thick add water to make it the desired consistency
  11. Cook for another 3 minutes in microwave
  12. Just before serving stir in reserved bacon
