Kosher Dill Pickles

Ingredients

  • 30 to 40 medium cucumbers
  • 34 c sugar
  • 12 c salt
  • 3 Tbsp pickling spice
  • 1 qt vinegar
  • 1 qt water
  • 1 head dill
  • 1 bay leaf
  • 1 clove garlic
  • 1 piece hot red pepper
  • 12 tsp mustard seed

Directions

  1. Wash and cut cucumbers in half lengthwise pack in hot jars with the last 5 ingredients put in each pint jar
  2. Combine sugar salt vinegar and water
  3. Tie pickling spices in a cheesecloth bag add to vinegar mixture
  4. Simmer 15 minutes
  5. Heat to boiling and pour over cucumbers leave 14-inch headspace
  6. Adjust caps Process pints and quarts 15 minutes in boiling water bath
  7. Yield about 7 pints
