Kosher Dill Pickles
Ingredients
- 30 to 40 medium cucumbers
- 34 c sugar
- 12 c salt
- 3 Tbsp pickling spice
- 1 qt vinegar
- 1 qt water
- 1 head dill
- 1 bay leaf
- 1 clove garlic
- 1 piece hot red pepper
- 12 tsp mustard seed
Directions
- Wash and cut cucumbers in half lengthwise pack in hot jars with the last 5 ingredients put in each pint jar
- Combine sugar salt vinegar and water
- Tie pickling spices in a cheesecloth bag add to vinegar mixture
- Simmer 15 minutes
- Heat to boiling and pour over cucumbers leave 14-inch headspace
- Adjust caps Process pints and quarts 15 minutes in boiling water bath
- Yield about 7 pints
