Kota Kapama

Ingredients

  • 3 lb chicken cut up
  • salt and pepper to taste
  • 2 Tbsp margarine or butter
  • 2 Tbsp olive or vegetable oil
  • 1 medium onion chopped
  • 1 large clove garlic chopped
  • 18 tsp ground cloves
  • 1 4-inch cinnamon stick
  • 14 c white wine optional
  • 1 12 c peeled canned tomatoes drained and chopped
  • 2 Tbsp tomato paste
  • 2 c water

Directions

  1. Sprinkle chicken pieces with salt and pepper
  2. In large saucepan heat margarine and oil and saute chicken pieces turning often until all sides are lightly browned
  3. Add onion and garlic and saute until transparent but not brown
  4. Add ground cloves and cinnamon and stir
  5. Then add wine tomatoes and tomato paste diluted in a little water
  6. Mix well with chicken pieces
  7. Add the 2 cups of water bring to boil reduce heat cover and simmer for 30 to 45 minutes or until chicken is tender
  8. Stir occasionally during cooking
  9. Taste for seasoning and serve with pasta or rice
