Kota Kapama

Ingredients
- 3 lb chicken cut up
- salt and pepper to taste
- 2 Tbsp margarine or butter
- 2 Tbsp olive or vegetable oil
- 1 medium onion chopped
- 1 large clove garlic chopped
- 18 tsp ground cloves
- 1 4-inch cinnamon stick
- 14 c white wine optional
- 1 12 c peeled canned tomatoes drained and chopped
- 2 Tbsp tomato paste
- 2 c water
Directions
- Sprinkle chicken pieces with salt and pepper
- In large saucepan heat margarine and oil and saute chicken pieces turning often until all sides are lightly browned
- Add onion and garlic and saute until transparent but not brown
- Add ground cloves and cinnamon and stir
- Then add wine tomatoes and tomato paste diluted in a little water
- Mix well with chicken pieces
- Add the 2 cups of water bring to boil reduce heat cover and simmer for 30 to 45 minutes or until chicken is tender
- Stir occasionally during cooking
- Taste for seasoning and serve with pasta or rice
