Ingredients

  • 3 lb boneless lamb cubed
  • 2 leeks cut into 12-inch pieces
  • 1 c shredded cabbage
  • 14 tsp black pepper
  • 1 Tbsp chopped parsley
  • 6 potatoes sliced
  • 4 carrots cut into 1-inch pieces
  • 1 medium onion sliced
  • 1 tsp salt
  • 3 c water

Directions

  1. Place alternate layers of meat and vegetables in a large Dutch oven
  2. Sprinkle each layer with salt and pepper
  3. Add water
  4. Bring to a boil and reduce the heat
  5. Cover and simmer 12 hour or until the meat is tender
  6. Sprinkle with parsley before serving
