Lancanshire Hot Pot

Ingredients

  • 1 lb lean tender beef
  • 5 medium potatoes
  • 2 medium carrots
  • 2 medium onions
  • 2 stalks celery
  • 12 level tsp pepper
  • 2 Tbsp chopped parsley
  • 12 level tsp mixed herbs
  • 1 tsp salt
  • 34 pt stock or beef cubes

Directions

  1. Cut meat and vegetables into very thin slices
  2. Place layer of potatoes on bottom of greased 3-pint dish
  3. Add layer of meat onions carrots and celery
  4. Sprinkle some of each seasoning on each layer
  5. Repeat order of potatoes meat and vegetables with top layer of potatoes
  6. Pour stock into dish until 34 full Cover dish and bake for 2 hours in moderate 350 oven
  7. Remove cover for last 30 minutes to brown potatoes
  8. Serves 6 people
