LaniceS Potato Soup
Ingredients
- 5 to 6 medium potatoes peeled and grated
- 1 small onion or 12 medium onion
- 12 green pepper optional
- 2 c cubed Velveeta cheese
- 12 c milk
- water to cover potatoes
- salt and pepper to taste
Directions
- Peel and grate potatoes in large pot
- Dice onion and green pepper
- Add water enough to cover potatoes
- Bring to a boil reduce to simmer and cover for 20 to 30 minutes or until potatoes are tender
- Add cheese and milk cook 10 minutes longer to melt cheese
- Add salt and pepper to taste
