Lasagna Sausage Pinwheels

Ingredients

• 1 lb hot Italian link sausage cut into 1-inch pieces
• 34 c chopped onion
• 1 clove garlic minced
• 3 c tomato juice
• 1 6 oz can tomato paste
• 12 c water
• 2 tsp sugar
• 12 tsp salt
• 1 bay leaf
• 1 12 oz carton cottage cheese
• 1 egg beaten
• 12 c grated Parmesan cheese divided
• 2 c shredded Mozzarella cheese divided
• salt and pepper to taste
• 12 16 oz pkg lasagna noodles

Directions

1. Brown sausage over low heat in a large heavy skillet drain sausage on paper towels reserving 14 cup drippings
2. Saute onion and garlic in drippings until crisp-tender
3. Return sausage to skillet stir in tomato paste water sugar 12 teaspoon salt and bay leaf
4. Simmer uncovered for 1 hour stir occasionally Discard bay leaf
