LauraS Christmas Morning Eggs

Ingredients

  • 10 eggs
  • 3 Tbsp sour cream
  • salt and pepper to taste
  • 1 lb sausage 12 lb hot 12 lb mild
  • 1 bell pepper chopped
  • 1 medium onion chopped
  • 1 c fresh mushrooms sliced
  • 1 can Ro-Tel tomatoes drained
  • 8 oz American processed cheese
  • 8 oz Cheddar cheese
  • 8 oz Mozzarella cheese

Directions

  1. Mix eggs sour cream salt and pepper in blender and pour in 9 x 13-inch casserole dish
  2. Bake 7 minutes at 400
  3. Cook sausage Add vegetables except Ro-Tel tomatoes and saute until tender
  4. Add tomatoes and pour over egg mixture
  5. Melt cheeses and spread over egg and sausage mixtures
  6. Refrigerate overnight or longer
  7. Bake uncovered at 350 until hot and bubbly
  8. Good served with grits souffle and hot curried fruit
