LauraS Christmas Morning Eggs
Ingredients
- 10 eggs
- 3 Tbsp sour cream
- salt and pepper to taste
- 1 lb sausage 12 lb hot 12 lb mild
- 1 bell pepper chopped
- 1 medium onion chopped
- 1 c fresh mushrooms sliced
- 1 can Ro-Tel tomatoes drained
- 8 oz American processed cheese
- 8 oz Cheddar cheese
- 8 oz Mozzarella cheese
Directions
- Mix eggs sour cream salt and pepper in blender and pour in 9 x 13-inch casserole dish
- Bake 7 minutes at 400
- Cook sausage Add vegetables except Ro-Tel tomatoes and saute until tender
- Add tomatoes and pour over egg mixture
- Melt cheeses and spread over egg and sausage mixtures
- Refrigerate overnight or longer
- Bake uncovered at 350 until hot and bubbly
- Good served with grits souffle and hot curried fruit
