Layered Potato Salad
Ingredients
- 4 cans sliced new potatoes drained well
- 1 large carton cottage cheese
- 1 pt real mayonnaise
- 1 onion chopped
- 8 eggs boiled and chopped
- 1 pkg Hidden Valley Ranch dressing dry
- lemon pepper to taste
- 2 Tbsp oil optional
Directions
- Layer 12 potatoes in a large bowl
- Sprinkle with 12 onion and 12 eggs
- Drizzle with 1 tablespoon oil if desired
- Blend cottage cheese and mayonnaise together and spread 12 over above layers sprinkle with 12 the dry dressing mix and lemon pepper to taste
- Be generous with the lemon pepper
- Repeat layers
- Let set overnight to develop flavors
