Lean Beef Stroganoff
Ingredients
- 2 lb lean beef roast
- 6 Tbsp flour
- 1 12 tsp salt
- 14 tsp pepper
- 2 Tbsp corn oil
- 1 c onions chopped
- 1 c tomato juice
- 1 12 c water
- 12 lb sliced fresh mushrooms
- 2 Tbsp flour
- 12 c water
- 1 12 c evaporated skimmed milk
Directions
- Remove visible fat from roast and slice into pieces about 2 x 2 x 12 inches
- Dredge meat with 6 tablespoons flour that has been seasoned with salt and pepper
- Brown meat in oil
- Add onions tomato juice and 1 12 cups water
- Cover and simmer 1 to 1 12 hours
- Add mushrooms simmer 30 minutes more
- Thicken with 2 tablespoons flour that has been combined with 12 cup of water Add evaporated milk and heat to almost simmering
- Serve with rice or noodles
