Leftover Corn-Off-The-Cob
Ingredients
- 4 to 5 ears cooked corn-on-the-cob
- 1 medium onion chopped
- 1 Tbsp butter
- 14 c milk
- salt and pepper to taste
- Parmesan cheese
Directions
- Cut corn from cob and scrape cob set aside
- Melt butter in large skillet
- Add chopped onion and cover Stir once or twice until onion is translucent
- Add corn and milk if corn is dry Cover and heat through
- Season to taste
- Sprinkle with cheese if desired
