Lemon-Dijon Chicken Breasts
Ingredients
- 12 c fine dry breadcrumbs
- 2 tsp grated lemon rind
- 2 Tbsp country-style Dijon mustard
- 3 Tbsp lemon juice
- 6 4 oz skinned boned chicken breast halves
- 1 Tbsp lime juice
- vegetable cooking spray
- lemon slices optional
Directions
- Combine breadcrumbs and rind stirring well
- Combine lemon juice mustard and lime juice brush mixture over both sides of chicken
- Dredge chicken in breadcrumb mixture
- Place chicken in a 13 x 9 x 2-inch baking dish coated with cooking spray sprinkle with any remaining breadcrumb mixture
- Bake uncovered at 375 for 15 minutes
- Turn chicken and bake an additional 15 minutes or until done
- Garnish with lemon slices if desired
