Lemon-Dijon Chicken Breasts

Ingredients

  • 12 c fine dry breadcrumbs
  • 2 tsp grated lemon rind
  • 2 Tbsp country-style Dijon mustard
  • 3 Tbsp lemon juice
  • 6 4 oz skinned boned chicken breast halves
  • 1 Tbsp lime juice
  • vegetable cooking spray
  • lemon slices optional

Directions

  1. Combine breadcrumbs and rind stirring well
  2. Combine lemon juice mustard and lime juice brush mixture over both sides of chicken
  3. Dredge chicken in breadcrumb mixture
  4. Place chicken in a 13 x 9 x 2-inch baking dish coated with cooking spray sprinkle with any remaining breadcrumb mixture
  5. Bake uncovered at 375 for 15 minutes
  6. Turn chicken and bake an additional 15 minutes or until done
  7. Garnish with lemon slices if desired
