Lemon-Glazed Persimmon Bars
Ingredients
- 1 c persimmon pulp
- 8 oz chopped pitted dates
- 1 12 tsp lemon juice
- 12 c salad oil
- 1 34 c flour
- 1 tsp each salt cinnamon nutmeg
- 14 tsp cloves
- 1 tsp soda
- 1 egg
- 1 c sugar
- 1 c chopped nuts
Directions
- Mix persimmon pulp and
- lemon
- juice
- with soda and set aside In large bowl
- lightly beat egg sugar oil and dates Combine dry ingredients
- Add to date mixture alternately with persimmon pulp just until well blended
- Stir in nuts
- Spread on greased and floured jelly
- roll pan
- Bake at 350 about 25 minutes until lightly browned
- Cool
- in
- pan about 5 minutes then spread with Lemon Glaze
- Cool thoroughly
- Cut in bars 3 x 1 12-inches Keep
- well wrapped
- Makes 30 bars
- Raisins can be used giving different flavor
