Lemon-Glazed Persimmon Bars

Ingredients

  • 1 c persimmon pulp
  • 8 oz chopped pitted dates
  • 1 12 tsp lemon juice
  • 12 c salad oil
  • 1 34 c flour
  • 1 tsp each salt cinnamon nutmeg
  • 14 tsp cloves
  • 1 tsp soda
  • 1 egg
  • 1 c sugar
  • 1 c chopped nuts

Directions

  1. Mix persimmon pulp and
  2. lemon
  3. juice
  4. with soda and set aside In large bowl
  5. lightly beat egg sugar oil and dates Combine dry ingredients
  6. Add to date mixture alternately with persimmon pulp just until well blended
  7. Stir in nuts
  8. Spread on greased and floured jelly
  9. roll pan
  10. Bake at 350 about 25 minutes until lightly browned
  11. Cool
  12. in
  13. pan about 5 minutes then spread with Lemon Glaze
  14. Cool thoroughly
  15. Cut in bars 3 x 1 12-inches Keep
  16. well wrapped
  17. Makes 30 bars
  18. Raisins can be used giving different flavor
