Lemon-Zucchini Cookies

Ingredients

• 34 c butter softened
• 34 c sugar
• 1 egg
• 1 tsp grated lemon rind
• 2 c flour
• 1 tsp baking powder
• 12 tsp salt
• 1 c zucchini peeled and shredded
• 1 c walnuts chopped
• 1 c confectioners sugar sifted
• 1 12 Tbsp lemon juice

Directions

1. Cream butter gradually add 34 cup sugar beating well at medium speed of an electric mixer
2. Add egg and lemon rind beating well
3. Combine flour baking powder and salt stir well Add to creamed mixture mixing well
4. Stir in zucchini and walnuts
5. Drop dough by rounded teaspoonfuls onto greased cookie sheets
6. Bake at 350 for 10 minutes
7. Remove to wire racks Combine confectioners sugar and lemon juice stir well
8. Drizzle over warm cookies let cool completely
