Lemon Butter Or Curd

Ingredients

• 3 eggs beaten
• 3 lemons juice only
• 2 rinds of lemon finely grated
• 6 oz butter
• 2 c sugar

Directions

1. Mix all together in a heavy saucepan and cook over low heat until thickened
2. Can in small jelly jars or use the whole amount Cool and refrigerate
3. Spread on fruit breads bagels or as a jam
