Lemon Butter Or Curd

Ingredients
- 3 eggs beaten
- 3 lemons juice only
- 2 rinds of lemon finely grated
- 6 oz butter
- 2 c sugar
Directions
- Mix all together in a heavy saucepan and cook over low heat until thickened
- Can in small jelly jars or use the whole amount Cool and refrigerate
- Spread on fruit breads bagels or as a jam
