Lemon Cake Pie

Ingredients

  • 3 eggs separated
  • 2 Tbsp grated lemon peel
  • 23 c lemon juice
  • 1 c milk
  • 1 14 c sugar
  • 13 c all-purpose flour
  • 14 tsp salt

Directions

  1. Beat egg yolks beat in lemon peels lemon juice and milk
  2. Add sugar flour and salt beat until smooth
  3. Beat egg whites in separate bowl until stiff peaks form
  4. Beat lemon mixture into egg whites on low speed until blended about 11 minutes
  5. Pour into 1 9-inch uncooked pastry
  6. Bake until golden brown 45 to 50 minutes
  7. Top with whipped cream when serving if desired
