Lemon Cake Pudding

Ingredients

  • 1 c sugar
  • 2 lemons grated rind and juice
  • 2 eggs separated
  • 2 Tbsp butter melted
  • 2 Tbsp flour
  • 1 c milk

Directions

  1. Mix sugar with flour and stir in beaten egg yolks and lemon juicerind while gradually adding milk Stir in butter Set aside Beat egg whites until stiff
  2. Fold into first mixture
  3. Pour into a greased 8 x 8-inch Pyrex dish
  4. Place in a pan of hot water and bake at 350 until tests done The top will have appearance of a cake with custard on the bottom
