Lemon Caper Chicken
Ingredients
- 14 c flour
- 12 tsp pepper
- 12 tsp paprika
- 5 tsp oil
- 2 Tbsp lemon juice
- 14 c chicken broth
- 2 Tbsp drained capers
- 4 chicken breasts boneless and skinless
Directions
- Combine flour paprika and pepper on a plate
- Press chicken into mixture coating evenly and then shake off excess
- In a heavy 10-inch skillet heat oil over medium-high heat for 1 minute
- Add chicken and cook for 3 minutes on each side
- Do not overcook
- Place on heated platter
- Add chicken broth to skillet scraping up any browned bits on the bottom Stir in the lemon juice and capers and heat through
- Pour sauce over chicken breasts and serve
- Serves 4
