Lemon Cheese PieMakes 9-Inch Pie

Ingredients

  • ready-made graham cracker crust or 1 13 c crushed graham crackers 14 c softened butter or margarine and 14 c sugar
  • 2 8 oz pkg cream cheese
  • 34 c sugar
  • 3 eggs well beaten
  • 1 Tbsp grated lemon peel
  • 3 Tbsp lemon juice
  • 1 c sour cream
  • 2 to 3 Tbsp sugar
  • 12 tsp vanilla
  • 2 Tbsp sliced almonds or more if desired

Directions

  1. Heat oven to 350
  2. Prepare crust if needed and press into pan
  3. Soften cream cheese in large bowl
  4. Beat in 34 cup sugar Add eggs one at a time beating until smooth after each one
  5. Beat in lemon peel and juice
  6. Pour into crust
  7. Bake 30 minutes or until center is firm
  8. Do not turn oven off
  9. Remove from oven Allow to stand 5 minutes
  10. During this time combine sour cream 1 tablespoon sugar and vanilla
  11. Spread over top of pie
  12. Sprinkle with nuts
  13. Return to oven
  14. Bake 2 minutes or until sour cream is set
  15. Cool
  16. Chill about 4 hours before serving
