Lemon Chess PieA Dessert Of Early Virginia

Ingredients

  • 2 eggs
  • juice and grated rind of 1 lemon
  • 1 c sugar
  • 12 stick butter melted
  • 1 Tbsp white cornmeal sifted

Directions

  1. Beat the eggs with a fork or wire whisk and gradually add the sugar
  2. Add the lemon juice and rind mix well
  3. Slowly add all ingredients until completely blended
  4. Pour into an 8-inch pie shell and bake at 350 for 35 to 40 minutes or until brown or until a knife inserted into the filling comes out clean
