Lemon Chicken
Ingredients
- 1 lb boneless chicken breast cut in strips
- 1 onion chopped
- 1 large carrot sliced
- 1 garlic clove minced
- 2 Tbsp oleo
- 1 Tbsp cornstarch
- 1 14 12 oz can chicken broth
- 2 to 3 Tbsp lemon juice
- 1 tsp grated lemon peel
- salt
- 1 12 c instant rice uncooked
- 1 c frozen broccoli
- 14 c parsley
Directions
- In a skillet cook the chicken onion carrot and garlic in butter until chicken is lightly brown
- In a bowl combine the cornstarch and broth stir in the lemon juice peel salt and rice
- Add to skillet and bring to a boil
- Cover and simmer 5 to 10 minutes or until rice is tender
