Lemon Cobbler

Ingredients

  • 4 c flour
  • 34 c shortening 12 margarine 12 lard
  • 2 tsp baking powder
  • 12 tsp salt
  • 2 eggs
  • 1 tsp baking soda in a little hot water
  • 12 c milk
  • 34 c sugar
  • 2 boxes lemon pie filling

Directions

  1. Work flour shortening and baking powder into a pie crust like dough
  2. Then add salt eggs baking soda milk and sugar
  3. Mix ingredients until well blended and dough can be rolled on a floured surface
  4. Divide dough into two parts
  5. Roll first part out to fit cookie sheet
  6. Prepare two boxes of lemon pie filling according to package directions
  7. Spread evenly over dough
  8. Cover with another layer of dough
  9. Prick some holes in the top layer to allow steam to escape
  10. Seal edges with the tines of a fork
  11. Bake at 350 for 30 minutes
  12. It should be lightly browned
  13. When cool sprinkle with powdered sugar and cut into squares
