Lemon Cream Chicken
Ingredients
- 1 lb chicken breasts
- 1 c half and half
- 4 Tbsp lemon juice
- salt
- pepper to taste
- grated rind of 1 lemon
- 1 to 2 tsp butter
- Parmesan cheese
- 3 to 4 tsp sherry optional
Directions
- Pound chicken until flat
- Brown on both sides in butter
- Put chicken into flat baking dish 9 x 9-inch
- Combine half and half and fresh squeezed lemon juice
- Add salt pepper and lemon rind Pour over chicken
- Sprinkle with Parmesan cheese and broil for 10 minutes or until cheese bubbles
