Lemon Cream Pie

Ingredients

  • 34 c sugar
  • 1 c milk
  • 2 eggs separated
  • 3 Tbsp flour
  • 14 tsp cream of tartar
  • 14 tsp salt
  • 2 Tbsp lemon juice
  • grated rind of 1 lemon
  • 2 Tbsp butter

Directions

  1. Combine 12 cup sugar and milk and heat
  2. Beat egg yolks
  3. Add flour combined with sugar and salt
  4. Pour into hot mixture and cook until it begins to thicken
  5. Add lemon juice and grated rind and cook 1 minute stir
  6. Add butter stir well
  7. Pour into baked pie shell
  8. Beat 2 egg whites combined with 14 teaspoon cream of tartar
  9. Add 4 teaspoons of sugar
  10. Beat until stiff
  11. Bake at 375 for about 15 minutes
