Lemon Cream Pudding

Ingredients

  • 1 c sugar
  • 18 tsp salt
  • 14 c cornstarch
  • 1 c cold water
  • 34 c milk
  • 3 eggs separated
  • 12 c lemon juice
  • 12 tsp grated lemon rind
  • currant jelly

Directions

  1. Thoroughly mix sugar salt and cornstarch in top of double boiler
  2. Add cold water and milk blend until smooth
  3. Stir constantly over direct heat until mixture boils and becomes transparent-looking
  4. Place over boiling water cover and cook 15 minutes
