Lemon Herb Chicken With Hollandaise Sauce

Ingredients

  • 2 6 oz boneless chicken breasts
  • 1 c Italian bread crumbs
  • 6 oz frozen broccoli
  • 3 egg yolks
  • 8 oz butter
  • 1 Tbsp lemon juice
  • 18 tsp cayenne pepper or to taste

Directions

  1. Dip chicken breasts in bread crumbs
  2. Place the fillets on microwavable dish and cover with a domed microwavable cover
  3. Cook fillet on High for 4 minutes
  4. Rotate dish 14 turn and continue cooking on High for 4 additional minutes
  5. Add 18 cup of water to the frozen broccoli in microwavable dish and cover
  6. Microwave broccoli for 3 minutes on High
  7. Separate the broccoli and microwave for 3 additional minutes on High
  8. Divide broccoli and place each portion with a chicken breast
  9. Pour Hollandaise Sauce equally over both portions and serve
