Lemon Meringue Pie
Ingredients
- 7 Tbsp cornstarch
- 1 12 c sugar
- 12 tsp salt
- 2 c boiling water
- 3 eggs separated
- 14 c lemon juice
- 2 Tbsp butter
- 1 Tbsp lemon peel
- 9-inch baked pie shell
Directions
- In the top of a double boiler combine cornstarch sugar and salt
- Add water
- Cook until thick stirring constantly
- Cover and place over boiling water for 10 minutes
- Beat egg yolks slightly add a little hot mixture
- Stir and pour back into pan Cook for 2 minutes more stirring constantly
- Remove from heat Add lemon juice butter and grated peel
- Cool to room temperature
- Do not stir
- Pour into baked cool shell
