Lemon Meringue Pie

Ingredients
- 1 baked pastry shell
- 1 23 c sugar
- 6 Tbsp cornstarch
- 12 c lemon juice
- 4 eggs separated
- 12 c boiling water
- 2 Tbsp butter
- 14 tsp cream of tartar
Directions
- Preheat oven to 350
- In heavy saucepan combine 1 13 cups sugar and cornstarch add lemon juice
- In small bowl beat egg yolks
- Add to lemon mixture
- Gradually add water stirring constantly
- Over medium heat cook and stir until mixture boils and thickens about 8 to 10 minutes
- Remove from heat
- Add butter stir until melted
- Pour into prepared pastry shell
