Lemon Meringue Pie

Lemon Meringue Pie

Ingredients

  • 1 baked pastry shell
  • 1 23 c sugar
  • 6 Tbsp cornstarch
  • 12 c lemon juice
  • 4 eggs separated
  • 12 c boiling water
  • 2 Tbsp butter
  • 14 tsp cream of tartar

Directions

  1. Preheat oven to 350
  2. In heavy saucepan combine 1 13 cups sugar and cornstarch add lemon juice
  3. In small bowl beat egg yolks
  4. Add to lemon mixture
  5. Gradually add water stirring constantly
  6. Over medium heat cook and stir until mixture boils and thickens about 8 to 10 minutes
  7. Remove from heat
  8. Add butter stir until melted
  9. Pour into prepared pastry shell
