Lemon Meringue Pie

Ingredients

  • 7 Tbsp cornstarch
  • 1 12 c sugar
  • 12 tsp salt
  • 2 c boiling water
  • 3 eggs separated
  • 14 c lemon juice
  • 2 Tbsp butter
  • 1 Tbsp lemon peel
  • 9-inch baked pie shell

Directions

  1. In the top of a double boiler combine cornstarch sugar and salt
  2. Add water
  3. Cook until thick stirring constantly
  4. Cover and place over boiling water for 10 minutes
  5. Beat egg yolks slightly add a little hot mixture
  6. Stir and pour back into pan Cook for 2 minutes more stirring constantly
  7. Remove from heat Add lemon juice butter and grated peel
  8. Cool to room temperature
  9. Do not stir
  10. Pour into baked cool shell
