Lemon Meringue PieMakes One 9-Inch Pie
Ingredients
- 1 12 c sugar
- 1 12 c water
- 1 Tbsp butter
- 13 c cornstarch
- 3 egg yolks beaten
- 12 c lemon juice
- baked 9-inch pie shell
Directions
- In a saucepan mix the sugar and cornstarch very well Gradually stir in water
- Cook over medium heat and stir constantly until mixture gets thick
- Boil 1 minute
- Stir a little of this hot mixture very slowly into the egg yolks
- Then blend this mix into the hot mix in saucepan
- Return to heat and boil about 1 minute more stirring constantly until smooth and thick
- Blend in butter
- Stir to melt and then add lemon juice and stir well
- Pour into baked shell
- Cover with meringue
- Be sure to seal meringue to crust so it doesnt shrink
- Bake in a 400 oven for 8 to 10 minutes or until light golden brown
