Lemon Meringue PieMakes One 9-Inch Pie

Ingredients

  • 1 12 c sugar
  • 1 12 c water
  • 1 Tbsp butter
  • 13 c cornstarch
  • 3 egg yolks beaten
  • 12 c lemon juice
  • baked 9-inch pie shell

Directions

  1. In a saucepan mix the sugar and cornstarch very well Gradually stir in water
  2. Cook over medium heat and stir constantly until mixture gets thick
  3. Boil 1 minute
  4. Stir a little of this hot mixture very slowly into the egg yolks
  5. Then blend this mix into the hot mix in saucepan
  6. Return to heat and boil about 1 minute more stirring constantly until smooth and thick
  7. Blend in butter
  8. Stir to melt and then add lemon juice and stir well
  9. Pour into baked shell
  10. Cover with meringue
  11. Be sure to seal meringue to crust so it doesnt shrink
  12. Bake in a 400 oven for 8 to 10 minutes or until light golden brown
