Lemon Mousse

Ingredients

  • grated rind of 2 lemons
  • 5 Tbsp fresh lemon juice
  • 1 whole egg
  • 2 eggs separated
  • 1 c heavy cream
  • 1 Tbsp lemon extract
  • 1 c sugar
  • 1 Tbsp cornstarch

Directions

  1. Prepare Ahead
  2. Combine lemon rind juice extract egg yolks egg 12 cup sugar and cornstarch in double boiler
  3. Cook over hot water stir constantly until thickened 6 to 8 minutes
  4. Remove from heat put in bowl to cool
  5. Mixture must be totally cold before going onto next step
