Lemon Mousse

Ingredients
- grated rind of 2 lemons
- 5 Tbsp fresh lemon juice
- 1 whole egg
- 2 eggs separated
- 1 c heavy cream
- 1 Tbsp lemon extract
- 1 c sugar
- 1 Tbsp cornstarch
Directions
- Prepare Ahead
- Combine lemon rind juice extract egg yolks egg 12 cup sugar and cornstarch in double boiler
- Cook over hot water stir constantly until thickened 6 to 8 minutes
- Remove from heat put in bowl to cool
- Mixture must be totally cold before going onto next step
