Lemon Pie

Ingredients

  • juice of two lemons
  • grated rind of 1 lemon
  • 2 Tbsp cornstarch
  • 3 eggs separated
  • 1 12 c sugar
  • 3 Tbsp flour
  • 1 tsp butter
  • 2 c boiling water

Directions

  1. Sift flour cornstarch and sugar into a saucepan
  2. Add butter Add lemon juice to the egg yolks and beat until they are thick and velvety
  3. Add this to the sugar cornstarch butter and flour mixture
  4. Stir until free of lumps
  5. You may add a few tablespoons of cold water to make it thin enough not to lump
  6. Pour the boiling water over lemon mixture
  7. Set on stove and let come to a boil stirring constantly
  8. And here is the secret your pie will have a better flavor if it scorches just a tiny bit
  9. Add grated lemon rind
  10. Let cool stirring often
