Lemon Pudding

Lemon Pudding

Ingredients

  • 34 c sugar
  • 2 Tbsp cornstarch
  • 14 tsp salt
  • 1 12 c milk
  • 2 slightly beaten egg yolks or 1 well beaten egg
  • 2 Tbsp butter
  • 12 tsp vanilla
  • 13 c lemon juice
  • 1 tsp grated lemon peel

Directions

  1. In saucepan blend sugar cornstarch and salt
  2. Add milk Cook and stir over medium heat until thickened and bubbly
  3. Cook and stir 2 minutes more
  4. Remove from heat
  5. Stir small amount of hot mixture into yolks or beaten egg
  6. Return to hot mixture cook and stir 2 minutes more
  7. Remove from heat blend in butter vanilla lemon juice and lemon peel
  8. Pour into sherbet dishes chill
  9. Makes 4 to 5 servings
