Lemon Rice Pudding

Ingredients

  • 3 c milk
  • 12 c rice
  • 2 eggs separated
  • 1 c sugar
  • 12 tsp salt
  • 14 c lemon juice
  • 2 tsp grated lemon rind
  • 18 tsp cream of tartar

Directions

  1. Cook rice in milk
  2. Beat egg yolks and add 34 cup sugar the salt lemon juice and rind combine with cooked rice
  3. Beat egg whites add cream of tartar and 14 cup sugar
  4. Pile on top of rice and bake for 20 to 25 minutes in moderate oven
