Lemon Rice Pudding

Ingredients
- 3 c milk
- 12 c rice
- 2 eggs separated
- 1 c sugar
- 12 tsp salt
- 14 c lemon juice
- 2 tsp grated lemon rind
- 18 tsp cream of tartar
Directions
- Cook rice in milk
- Beat egg yolks and add 34 cup sugar the salt lemon juice and rind combine with cooked rice
- Beat egg whites add cream of tartar and 14 cup sugar
- Pile on top of rice and bake for 20 to 25 minutes in moderate oven
